3 medium zucchinis

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg

2 cups marinara sauce

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Prepare the Zucchini: Preheat the oven to 375°F (190°C). Slice the zucchinis lengthwise into 1/4-inch thick strips using a mandoline slicer or a sharp knife. Sprinkle them lightly with salt and let them sit on paper towels for about 10 minutes to draw out excess moisture. Pat dry with additional paper towels.

    Make the Cheese Filling: In a mixing bowl, combine ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, Italian herbs, and a pinch of salt and pepper. Mix well until all ingredients are fully incorporated.

      Assemble the Rolls: Spread a thin layer of marinara sauce on the bottom of a baking dish (about 1 cup).
