2 medium zucchinis, finely diced

1 cup cooked rice (preferably day-old, for best texture)

2 tablespoons sesame oil

2 cloves garlic, minced

1 small onion, diced

1 bell pepper (any color), diced

1 cup frozen peas and carrots mix

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon oyster sauce (optional)

2 eggs, lightly beaten

2 green onions, sliced (for garnish)

Salt and pepper, to taste

A sprinkle of sesame seeds (optional, for garnish)

Instructions
 

Prepare the Zucchini: Start by finely dicing the zucchinis into small, even pieces. This will help them cook quickly and evenly.

    Sauté the Aromatics: In a large non-stick skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and diced onion. Sauté for about 2-3 minutes, until the onions become translucent and fragrant.

      Add Vegetables: Increase the heat to medium-high and add the diced zucchini and bell pepper to the pan. Cook for approximately 4-5 minutes, stirring frequently until the vegetables soften.

        Incorporate Rice: Push the vegetables to one side of the skillet. Add the cooked rice to the empty side and break apart any clumps. Stir well to combine the rice with the vegetables.

          Mix in Peas and Carrots: Stir in the frozen peas and carrots mix, along with the soy sauce and optional oyster sauce. Combine all ingredients well, ensuring the rice gets evenly coated with the sauces.

            Scramble the Eggs: Push the rice and veggies to one side again, and pour the beaten eggs into the other side of the skillet. Allow them to cook for 1-2 minutes until they begin to set, then scramble them with a spatula and mix into the rice.

              Season and Serve: Taste the fried rice and season with salt and pepper according to your preference. Once everything is heated through and well mixed, remove from heat.
