2 medium zucchini, grated and excess moisture squeezed out

1 pound ground chicken

1 cup breadcrumbs (preferably whole wheat)

1/2 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

2 large eggs

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1/4 teaspoon cayenne pepper (optional, for a kick)

3 tablespoons olive oil (for frying)

Fresh lemon wedges (for serving)

Instructions
 

Start by prepping the zucchini. Grate the zucchini using a box grater or a food processor. Place the grated zucchini in a clean kitchen towel and twist to remove as much excess moisture as possible. This step is crucial to avoid soggy fritters.

    In a large mixing bowl, combine the ground chicken, squeezed zucchini, breadcrumbs, Parmesan cheese, parsley, eggs, minced garlic, onion powder, paprika, black pepper, salt, and cayenne pepper (if using). Mix everything until well combined. The mixture should hold together when formed into patties.

      Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Once the oil is hot, use your hands to shape the mixture into small fritters, about 2-3 inches in diameter, and carefully place them in the skillet. Do not overcrowd the pan; you may need to cook in batches.

        Fry the fritters for about 4-5 minutes on each side or until golden brown and cooked through. You can add a little more oil between batches if needed.
