Watermelon Glazed Turkey

Ingredients
  

1 whole turkey (12-14 lbs)

2 cups fresh watermelon juice

1 cup brown sugar

1/2 cup apple cider vinegar

1/4 cup soy sauce

1 tablespoon Dijon mustard

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon smoked paprika

Salt and pepper to taste

Fresh watermelon slices (for garnish)

Fresh herbs (rosemary, thyme, or parsley for garnish)

Instructions
 

Prepare the Turkey:

    - Thaw the turkey in the refrigerator for several days prior to cooking if frozen. Remove the neck and giblets, then pat the turkey dry with paper towels.

      Make the Watermelon Glaze:

        - In a medium saucepan over medium heat, combine the fresh watermelon juice, brown sugar, apple cider vinegar, soy sauce, Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper.

          - Bring the mixture to a simmer, then reduce heat and let it cook for about 15-20 minutes until it thickens slightly, stirring occasionally. Remove from heat and let cool.

            Marinate the Turkey:

              - Place the turkey in a large roasting pan. Pour half of the watermelon glaze over the turkey, ensuring it’s evenly coated. Reserve the remaining glaze for later. Let the turkey marinate in the refrigerator for at least 2 hours, or overnight for better flavor.

                Preheat the Oven:

                  - Preheat your oven to 325°F (163°C).

                    Roast the Turkey:

                      - Remove the turkey from the refrigerator and let it sit at room temperature for 30 minutes before roasting.

                        - Tent the turkey with aluminum foil and place it in the oven. Roast the turkey, basting with the reserved glaze every 30 minutes, for about 3 to 4 hours or until the internal temperature reaches 165°F (74°C).

                          Caramelize the Glaze:

                            - In the last 30 minutes of cooking, remove the foil to allow the skin to crisp up. Continue basting with the glaze to create a caramelized coating.

                              Rest and Serve:

                                - Once cooked, allow the turkey to rest for at least 20-30 minutes before carving. This helps to keep the meat juicy and tender.

                                  - Garnish with fresh watermelon slices and herbs before serving.
