1 lb ground turkey

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) diced tomatoes, with green chilies

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), finely chopped

2 tsp chili powder

1 tsp cumin

1 tsp smoked paprika

½ tsp salt

½ tsp black pepper

1 cup corn kernels (fresh or frozen)

1 egg, beaten

½ cup breadcrumbs (there can be gluten-free options)

Olive oil for greasing the baking sheet

Optional: chopped cilantro and sour cream for topping

Instructions
 

Preheat Oven: Begin by preheating your oven to 375°F (190°C) and lightly grease a baking sheet with olive oil.

    Cook Onion and Garlic: In a large skillet, over medium heat, add a splash of olive oil. Sauté the chopped onion for about 3 minutes until it becomes translucent. Then, add minced garlic and cook for an additional minute until fragrant.

      Brown the Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Cook until browned (about 5-7 minutes), stirring to break up the meat.

        Mix Ingredients: Once the turkey is cooked through, stir in the black beans, diced tomatoes with green chilies, bell pepper, chili powder, cumin, smoked paprika, salt, black pepper, and corn. Mix well and let everything simmer for about 5 minutes, allowing flavors to meld together.

          Combine with Bindings: Remove the skillet from heat and let the mixture cool slightly. Once cooled, transfer to a mixing bowl and add the beaten egg and breadcrumbs. Mix until well combined; the mixture should be moist but hold together.

            Form Bites: Using your hands, scoop out about 1 tablespoon of the turkey mixture and form small bite-sized balls or patties. Place them on the greased baking sheet, spaced about 1 inch apart.

              Bake: Put the baking sheet in the preheated oven and bake for 20-25 minutes, or until the bites are golden brown and cooked through.

                Serve: Remove from the oven and allow to cool slightly before serving. They can be enjoyed warm or at room temperature. Top with chopped cilantro and a dollop of sour cream if desired.
