Ingredients

1 can (5 oz) of tuna, drained

1 medium zucchini, grated and excess moisture squeezed out

1/2 cup breadcrumbs (whole wheat or gluten-free)

1/4 cup finely chopped red onion

2 cloves garlic, minced

1 large egg

2 tablespoons fresh parsley, chopped

1 teaspoon lemon zest

1/2 teaspoon paprika

Salt and pepper, to taste

Olive oil, for frying

Instructions

Prepare Zucchini: Start by grating the zucchini with a box grater or food processor. Place the grated zucchini into a clean kitchen towel, twist, and squeeze out as much moisture as possible. This step will help your patties hold together better.

Mix Ingredients: In a large mixing bowl, combine the drained tuna, squeezed zucchini, breadcrumbs, red onion, minced garlic, egg, parsley, lemon zest, paprika, salt, and pepper. Mix well until all ingredients are evenly combined.

Form Patties: Using your hands, form the mixture into small patties (about 2 inches in diameter), pressing them firmly to ensure they hold together.

Cook Patties: Heat a couple of tablespoons of olive oil in a large skillet over medium heat. Once the oil is hot, carefully add the patties to the pan, making sure not to overcrowd them. Cook the patties for about 4-5 minutes on each side or until they are golden brown and crispy.

Drain and Serve: Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil. Serve warm with your choice of dipping sauce or atop a fresh salad.

Garnish and Enjoy: Optionally, top with a dollop of Greek yogurt or a squeeze of fresh lemon juice before serving. Enjoy your Tuna Zucchini Patties as a delightful appetizer or a light main dish!
