1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn kernels, drained

1 can (10 oz) red enchilada sauce

1 can (10 oz) diced tomatoes with green chilies

12 corn tortillas

3 cups shredded cheddar cheese

1 teaspoon cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

Salt and pepper to taste

¼ cup chopped fresh cilantro (for garnish)

Sliced jalapeños (for garnish, optional)

Sour cream (for serving, optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook Beef: In a large skillet over medium heat, add ground beef. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Drain excess grease.

      Add Aromatics: Add the diced onion and minced garlic to the skillet with the beef. Sauté until the onion is translucent, about 3-4 minutes.

        Mix Ingredients: Stir in the black beans, corn, red enchilada sauce, diced tomatoes, cumin, chili powder, smoked paprika, salt, and pepper. Cook for another 5 minutes until everything is heated through.

          Layer the Casserole: In a greased 9x13 inch baking dish, spread a thin layer of the beef mixture on the bottom. Place 4 corn tortillas over the mixture, then add another layer of the beef mixture followed by 1 cup of shredded cheddar cheese. Repeat this process, layering 4 tortillas, the remaining beef mixture, and the final layer of 2 to 3 tortillas on top.

            Top with Cheese: Sprinkle the remaining 2 cups of cheese evenly over the top layer of tortillas.

              Bake: Cover the baking dish with aluminum foil (to prevent sticking, you can spray the foil with cooking spray). Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

                Cool & Serve: Once out of the oven, let the casserole cool for 10-15 minutes. Garnish with chopped cilantro and jalapeño slices if desired. Serve warm with sour cream on the side.
