1.5 lbs chicken breast, diced into bite-sized pieces

1 tablespoon olive oil

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup corn kernels (frozen or fresh)

1 red bell pepper, diced

1 green bell pepper, diced

1 red onion, diced

8 small corn or flour tortillas

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Optional toppings: sour cream, jalapeños, avocado

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Chicken: In a large bowl, toss the diced chicken with olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper until evenly coated.

      Sheet Pan Assembly: Spread the spiced chicken evenly onto a large sheet pan. Then, scatter the corn, red bell pepper, green bell pepper, and red onion around the chicken.

        Bake: Place the sheet pan in the preheated oven and bake for about 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.

          Add Cheese: Remove the sheet pan from the oven. Sprinkle the shredded cheese over the chicken and vegetable mixture. Return the pan to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

            Warm Tortillas: While the chicken and veggies are baking, warm the tortillas on a skillet over medium heat for about 30 seconds on each side, or wrap them in foil and place them in the oven for the last few minutes of baking.

              Assemble Tacos: Once everything is ready, take the chicken and veggie mixture out of the oven. Using tongs or a spoon, fill each tortilla with the mixture.
