1 cup corn (fresh, canned, or frozen)

2 cups romaine lettuce, chopped

1 cup cherry tomatoes, halved

1 cup diced red onion

1 avocado, sliced

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup fresh cilantro, chopped

1/2 cup sour cream or Greek yogurt

1 cup salsa (mild or spicy, according to preference)

Instructions
 

Cook the Base:

    - In a medium saucepan, combine the brown rice or quinoa with vegetable or chicken broth. Bring to a boil, then reduce to a simmer. Cook according to package instructions until tender (about 20-25 minutes). Fluff with a fork and keep warm.
