Ingredients

2 medium sweet potatoes, peeled and diced

1 large apple (such as Granny Smith or Honeycrisp), cored and diced

1 medium red onion, diced

2 tablespoons olive oil

1 teaspoon ground cinnamon

½ teaspoon nutmeg

Salt and pepper to taste

4 large eggs

Fresh parsley or cilantro, chopped (for garnish)

Optional: Crumbled feta or goat cheese (for serving)

Instructions

Prepare the Sweet Potatoes: In a large skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and season with a pinch of salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they start to soften and turn golden brown.

Add the Onions and Apples: Stir in the diced red onion and apple. Sprinkle the mixture with ground cinnamon and nutmeg. Cook for another 5-7 minutes, stirring frequently, until the onions are translucent and the apples are slightly tender.

Cook the Eggs: In a separate skillet, cook the eggs according to your preference (fried, scrambled, or poached). If you're frying them, you might want to add a bit of olive oil or butter to the pan.

Combine and Serve: Once the sweet potato, apple, and onion mixture is ready, taste and adjust seasoning if needed. Plate the sweet potato hash and top with a cooked egg. Garnish with freshly chopped parsley or cilantro. If desired, sprinkle crumbled feta or goat cheese on top for an added burst of flavor.

Enjoy! Serve immediately while warm for a hearty and delicious breakfast.
