Sweet Potato and Black Bean Tacos

2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, rinsed and drained

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper to taste

8 small corn tortillas

1 avocado, sliced

1 cup fresh cilantro, chopped

1 lime, cut into wedges

½ cup feta cheese or crumbled cotija (optional)

Hot sauce (optional, for serving)

Instructions
 

Preheat your oven to 425°F (220°C).

    Prepare the sweet potatoes: In a large bowl, toss the diced sweet potatoes with olive oil, cumin, smoked paprika, chili powder, salt, and pepper until evenly coated.

      Roast the sweet potatoes: Spread the sweet potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until tender and slightly caramelized, stirring halfway through for even cooking.

        Heat the black beans: In a small saucepan over medium heat, warm the black beans until heated through, about 5-7 minutes. Season with a pinch of salt and pepper to taste.

          Warm the tortillas: While the sweet potatoes and beans are cooking, heat a skillet over medium heat. Warm each corn tortilla for about 30 seconds on each side until soft and pliable.
