Ingredients

1 cup unsweetened shredded coconut

1 cup almond flour

1/2 cup cocoa powder

1/3 cup maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup dark chocolate chips (for coating)

Optional: Extra shredded coconut for rolling

Instructions

Mix Dry Ingredients: In a large mixing bowl, combine unsweetened shredded coconut, almond flour, cocoa powder, and salt. Stir until well mixed.

Combine Wet Ingredients: In a separate bowl, mix together the melted coconut oil, maple syrup, and vanilla extract until fully combined.

Combine Mixtures: Pour the wet mixture into the dry ingredients. Stir together until a sticky dough forms. If the mixture is too dry, add a splash of water or more maple syrup.

Shape the Balls: Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is formed into balls. You should yield around 12-15 balls.

Chill the Balls: Place the balls on a parchment-lined baking tray and refrigerate them for about 30 minutes. This will help them firm up.

Prepare Chocolate Coating: In a heatproof bowl, melt the dark chocolate chips either in the microwave (30-second intervals) or using a double boiler until smooth.

Coat the Balls: Remove the coconut balls from the refrigerator. Dip each one into the melted chocolate, ensuring it's fully covered, then place it back on the parchment. For an added touch, roll some of the balls in extra shredded coconut after coating.

Set the Chocolate: Once all the balls are coated, refrigerate them again for 15-20 minutes or until the chocolate has set.

Serve and Enjoy: After the chocolate is set, your Sweet Chocolate Coconut Bliss Bites are ready to be enjoyed! Serve them immediately or store them in an airtight container in the refrigerator.
