1 medium bell pepper (red or green), diced

1 medium onion, diced

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce

1/4 cup rice vinegar

1/4 cup ketchup

2 tablespoons brown sugar

1 tablespoon cornstarch (optional, for thickening)

1/4 cup chicken broth

2 tablespoons vegetable oil

Salt and pepper to taste

Cooked jasmine rice or fried rice, for serving

Sesame seeds and chopped green onions, for garnish

Marinate the Chicken: In a mixing bowl, combine the diced chicken with 2 tablespoons of soy sauce, garlic, and ginger. Let it marinate for at least 15 minutes to absorb the flavors.

    Prepare the Sauce: In a separate mixing bowl, whisk together the remaining 2 tablespoons of soy sauce, rice vinegar, ketchup, brown sugar, and chicken broth. If you prefer a thicker sauce, mix in cornstarch until well blended and set aside.
