Summer Corn and Tomato Pasta

8 oz spaghetti or your favorite pasta

2 cups fresh corn kernels (about 4 ears of corn)

2 cups cherry or grape tomatoes, halved

3 cloves garlic, minced

1 medium onion, finely chopped

1/4 cup extra virgin olive oil

1 cup fresh basil leaves, chopped (plus extra for garnish)

1 tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

1/2 cup grated parmesan cheese (plus extra for serving)

Juice of 1 lemon

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and red pepper flakes, cooking for another minute until fragrant.

      Add Corn and Tomatoes: Add the fresh corn kernels to the skillet and stir-fry for about 5 minutes, allowing them to slightly caramelize. Then, gently fold in the halved tomatoes and cook for another 3-4 minutes until the tomatoes soften but still hold their shape.

        Combine Pasta and Sauce: Add the drained pasta to the skillet with the sautéed vegetables. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

          Season and Finish: Mix in the chopped basil and lemon juice, seasoning with salt and pepper to taste. Then, add the grated parmesan cheese and toss again to combine.
