2 medium zucchinis, grated and excess moisture squeezed out

1 cup frozen or fresh corn kernels

1/2 cup all-purpose flour

1/2 cup cornmeal

2 large eggs

1/2 cup grated Parmesan cheese

1/4 cup finely chopped green onions

1/4 cup fresh cilantro, chopped

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon baking powder

Salt and pepper to taste

Oil for frying (vegetable or olive)

Sour cream or yogurt for serving (optional)

Prepare the Zucchini: In a large bowl, combine the grated zucchini with a pinch of salt. Let it sit for about 10 minutes to draw out some moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove excess liquid.

    Mix Ingredients: In the same bowl, add the corn kernels, all-purpose flour, cornmeal, eggs, Parmesan cheese, green onions, cilantro, garlic powder, smoked paprika, baking powder, salt, and pepper. Stir until well combined.

      Heat Oil: In a large skillet, heat about 1/4 inch of oil over medium heat. To test if the oil is ready, drop a small spoonful of the mixture into the oil; if it sizzles, the oil is ready.

        Form Fritters: Using a tablespoon or an ice cream scoop, drop the mixture into the hot oil, flattening each fritter slightly with the back of the spoon. Make sure to leave enough space between each fritter to prevent them from sticking together.
