Stuffed Mushrooms with Cream Cheese & Herbs

12 large cremini or button mushrooms (stems removed)

8 oz cream cheese, softened

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

2 tablespoons fresh chives, chopped

1 tablespoon fresh thyme leaves

2 cloves garlic, minced

1/2 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

1 tablespoon olive oil

1/4 cup breadcrumbs (for added crunch)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Mushrooms: Clean the mushrooms gently with a damp cloth. Remove the stems, and chop them finely. Set the mushroom caps aside.

      Make the Filling: In a mixing bowl, combine the softened cream cheese, grated Parmesan, chopped parsley, chives, thyme, minced garlic, crushed red pepper flakes (if using), and the finely chopped mushroom stems. Season with salt and pepper to taste. Mix until well combined and creamy.

        Stuff the Mushrooms: Using a small spoon or a piping bag, fill each mushroom cap generously with the cream cheese mixture, ensuring to mound it slightly above the top.

          Prepare for Baking: Place the stuffed mushrooms on a baking sheet lined with parchment paper. Drizzle a bit of olive oil over the top of each stuffed mushroom for added flavor.

            Add Crunch (Optional): If desired, sprinkle breadcrumbs over each stuffed mushroom for a bit of texture.

              Bake: Bake in the preheated oven for about 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.

                Serve: Remove from the oven and let them cool for a few minutes before serving. Garnish with additional fresh herbs if desired.
