2 cups fresh strawberries, hulled and quartered

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1 cup granulated sugar

1 cup water

Zest of 2 lemons

A pinch of salt

Prepare the Strawberries: In a blender, combine the quartered strawberries with 1/4 cup of the sugar. Blend until smooth. Strain the mixture through a fine-mesh sieve into a bowl to remove the seeds. Set aside.

    Make the Lemonade Base: In a small saucepan, combine the remaining sugar, water, and a pinch of salt. Heat over medium heat, stirring occasionally, until the sugar has completely dissolved. Remove from heat and allow to cool slightly.

      Mix Ingredients: In a large mixing bowl, combine the strawberry puree, freshly squeezed lemon juice, lemon zest, and the sugar-water mixture. Stir well until fully blended. Taste the mixture and adjust sweetness if necessary.

        Chill the Mixture: Refrigerate the mixture for about 1-2 hours, or until it is completely chilled. This will help the sorbet freeze faster and have a smoother texture.
