For the Meatballs:

1 lb ground beef (or ground turkey)

1/4 cup breadcrumbs (Panko for extra crunch)

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tbsp ginger, minced

2 tbsp soy sauce

1 tbsp gochujang (Korean chili paste)

1 tbsp sesame oil

1 tsp black pepper

1 egg, beaten

For the Spicy Korean BBQ Sauce:

1/4 cup soy sauce

2 tbsp gochujang

1 tbsp honey or maple syrup

1 tbsp rice vinegar

1 tsp sesame oil

1 garlic clove, minced

1/2 tsp red pepper flakes (adjust for spiciness)

For the Bowls:

2 cups cooked rice (jasmine or brown rice)

1 cup steamed broccoli or bok choy

1/2 cup shredded carrots

1/2 cup cucumber, thinly sliced

Sesame seeds for garnish

Extra green onions for garnish

Lime wedges for serving

Preheat the Oven: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Make the Meatball Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, chopped green onions, minced garlic, minced ginger, soy sauce, gochujang, sesame oil, black pepper, and beaten egg. Mix until just combined; avoid over-mixing.

      Form the Meatballs: Roll the mixture into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.

        Bake the Meatballs: Bake in the preheated oven for 15-20 minutes, or until they are cooked through and nicely browned.

          Prepare the Spicy BBQ Sauce: While the meatballs are baking, whisk together the soy sauce, gochujang, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and red pepper flakes in a small saucepan. Heat over medium heat until bubbling, then lower to a simmer for about 5 minutes until slightly thickened. Remove from heat.

            Assemble the Bowls: In serving bowls, add a base of cooked rice, top with several meatballs, drizzle generously with the spicy BBQ sauce, and add steamed broccoli, shredded carrots, and cucumber.

              Garnish and Serve: Sprinkle sesame seeds and extra green onions on top. Serve with lime wedges on the side for an extra zesty flavor.
