1 lb large shrimp, peeled and deveined

1 cup quinoa, rinsed

2 cups vegetable broth or water

4 cloves garlic, minced

1 tbsp fresh ginger, grated

1-2 red chili peppers, finely chopped (adjust to taste)

3 tbsp olive oil

1 tbsp soy sauce

1 tbsp honey or maple syrup

1 tbsp lime juice

Salt and black pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Cook the Quinoa: In a medium saucepan, bring the vegetable broth or water to a boil. Add the rinsed quinoa, lower the heat, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

    Prepare the Shrimp Marinade: In a large bowl, combine minced garlic, grated ginger, chopped chili peppers, olive oil, soy sauce, honey, lime juice, salt, and black pepper. Mix well to create a marinade.

      Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade. Toss gently to ensure all the shrimp are evenly coated. Let it marinate for 15-20 minutes to absorb all the flavors.

        Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer (working in batches if necessary). Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque.
