1 lb boneless, skinless chicken thighs

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon smoked paprika

1 teaspoon cumin

½ teaspoon cayenne pepper (adjust to taste)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

2 cups cooked rice (white, brown, or cauliflower rice for a low-carb option)

1 cup canned black beans, drained and rinsed

1 cup corn (frozen or canned)

1 cup cherry tomatoes, halved

½ cup red onion, diced

1 avocado, sliced

½ cup shredded cheddar cheese

Fresh cilantro, for garnish

Lime wedges, for serving

Salsa or hot sauce, for serving

Instructions
 

Marinate the Chicken: In a bowl, mix together the olive oil, chili powder, smoked paprika, cumin, cayenne pepper, garlic powder, onion powder, salt, and pepper. Add the chicken thighs, ensuring they are well-coated. Let them marinate for at least 15 minutes (or longer if time allows).

    Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the marinated chicken thighs. Cook for about 6-7 minutes per side, or until the chicken is cooked through and has a nice char. Remove from heat and let it rest for a few minutes. Then, shred or slice the chicken into bite-sized pieces.

      Prepare the Rice Base: In serving bowls, divide the cooked rice evenly at the bottom.
