1 large head of cauliflower, cut into florets

1 cup all-purpose flour

1 cup water (or plant-based milk)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

1 cup buffalo sauce

4 large whole-wheat tortillas

1 cup shredded lettuce

1/2 cup diced tomatoes

1/2 cup diced cucumbers

1/4 cup red onion, thinly sliced

1/2 cup vegan ranch dressing (or regular ranch dressing)

Fresh cilantro, for garnish (optional)

Preheat the Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    Make the Batter: In a large mixing bowl, whisk together the flour, water (or plant-based milk), garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper until smooth and well combined.

      Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring they are well-coated, then place them evenly on the prepared baking sheet.

        Bake the Cauliflower: Bake in the preheated oven for 20-25 minutes, until the cauliflower is golden brown and crispy, flipping halfway through for even cooking.

          Add the Buffalo Sauce: Remove the cauliflower from the oven and drizzle the buffalo sauce over the crispy florets, tossing gently to coat evenly. Return to the oven for an additional 10 minutes to let the sauce soak in.

            Assemble the Wraps: While the cauliflower is baking, warm the whole-wheat tortillas in a dry skillet over medium heat for about 30 seconds on each side.

              Build Your Wrap: Place a warm tortilla on a flat surface. Layer on a handful of shredded lettuce, a generous scoop of the spicy buffalo cauliflower, diced tomatoes, cucumbers, red onion, and a drizzle of vegan or regular ranch dressing.

                Wrap It Up: Fold in the sides of the tortilla, then roll from the bottom up to encase all the fillings. Repeat for the remaining tortillas.
