1 medium head of cauliflower, cut into florets

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

2 cups elbow macaroni or any pasta of choice

3 cups sharp cheddar cheese, shredded

1 cup cream cheese, softened

1 cup milk (whole or 2% recommended)

1/2 cup hot sauce (like Frank's RedHot, adjust for spice level)

1 teaspoon Dijon mustard

1/2 teaspoon onion powder

1 cup Panko breadcrumbs

2 tablespoons butter, melted

Fresh chives or parsley, chopped for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Cauliflower: In a large bowl, toss the cauliflower florets with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated. Spread them out on a baking sheet lined with parchment paper. Roast the cauliflower for about 20 minutes, or until tender and slightly charred, flipping halfway through.

      Cook the Pasta: While the cauliflower is roasting, cook the macaroni according to package instructions until al dente. Drain and set aside.

        Make the Cheese Sauce: In a large saucepan over medium heat, combine the cream cheese and milk. Stir until the cream cheese is melted and well incorporated. Gradually add the shredded cheddar cheese, stirring continuously until melted and smooth.

          Add Flavor: Stir in the hot sauce, Dijon mustard, onion powder, and cooked macaroni. Mix well to combine. Gently fold in the roasted cauliflower until evenly distributed throughout the mixture.

            Prepare the Topping: In a small bowl, combine Panko breadcrumbs and melted butter, mixing until the breadcrumbs are coated.

              Assemble & Bake: Pour the mac and cheese mixture into a greased 9x13-inch baking dish. Evenly sprinkle the Panko topping over the macaroni and cheese. Bake in the preheated oven for about 25-30 minutes, or until bubbly and the top is golden brown.
