For the Meatballs:

1 lb ground turkey

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1 egg, lightly beaten

2 cloves garlic, minced

1 tbsp fresh parsley, chopped

1 tsp smoked paprika

1 tsp chili powder

1/2 tsp salt

1/2 tsp black pepper

1/4 tsp cayenne pepper (adjust to taste)

For the BBQ Sauce:

1 cup barbecue sauce (store-bought or homemade)

1 tbsp hot sauce (like Sriracha or your favorite)

1 tsp apple cider vinegar

For Assembly:

4 sub rolls

1 cup shredded lettuce

1 medium red onion, thinly sliced

1 cup sliced pickles (dill or bread and butter)

Optional: extra BBQ sauce for drizzling

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Make the Meatballs:

      - In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, egg, minced garlic, chopped parsley, smoked paprika, chili powder, salt, black pepper, and cayenne pepper.

        - Mix gently until all ingredients are well-combined. Be careful not to overmix to keep the meatballs tender.

          - Form the mixture into 1-inch meatballs and place them on a lined baking sheet.

            Bake the Meatballs:

              - Bake in the preheated oven for 20-25 minutes, or until the meatballs are browned and cooked through (internal temperature should reach 165°F or 75°C).

                Prepare the BBQ Sauce:

                  - While the meatballs are baking, combine the barbecue sauce, hot sauce, and apple cider vinegar in a small saucepan over medium heat.

                    - Stir occasionally and let it simmer for about 5-7 minutes to enhance the flavors. Remove from heat.

                      Coat the Meatballs:

                        - Once baked, remove the meatballs from the oven and immediately toss them in the BBQ sauce until well-coated.

                          Assemble the Subs:
