1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 cup buttermilk

2 cups peeled and diced apples (preferably Granny Smith or Honeycrisp)

1/2 cup chopped walnuts or pecans (optional)

3 tablespoons brown sugar (for topping)

1 teaspoon cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a standard muffin tin with paper liners or lightly grease the cups.

    Combine Dry Ingredients: In a medium mixing bowl, whisk together flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

        Add Egg and Vanilla: Beat in the egg and vanilla extract until well-combined and smooth.

          Incorporate Buttermilk: Pour in the buttermilk and mix until combined.

            Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.

              Fold in Apples and Nuts: Gently fold in the diced apples and nuts (if using) until evenly distributed throughout the batter.

                Prepare for Baking: Using a spoon or ice cream scoop, fill each muffin cup about 2/3 full with batter.

                  Make the Topping: In a small bowl, mix together brown sugar and 1 teaspoon of cinnamon. Sprinkle this mixture evenly over the tops of the filled muffin cups.

                    Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
