Slow Cooker White Chicken Chili

1 lb boneless, skinless chicken breasts

2 cans (15 oz each) white beans (such as cannellini or great northern), rinsed and drained

1 can (4 oz) diced green chiles

1 medium onion, diced

3 cloves garlic, minced

1 cup corn kernels (fresh, frozen, or canned)

4 cups low-sodium chicken broth

1 tsp ground cumin

1 tsp chili powder

1/2 tsp smoked paprika

1/2 tsp salt (or to taste)

1/2 tsp black pepper

1 cup cream cheese, cubed

Juice of 1 lime

Fresh cilantro, for garnish

Optional toppings: avocado, shredded cheese, sour cream

Instructions
 

Layer the Ingredients: In the slow cooker, place the chicken breasts at the bottom. Add the rinsed and drained white beans, diced green chiles, diced onion, minced garlic, and corn kernels on top of the chicken.

    Add the Broth and Spices: Pour in the low-sodium chicken broth. Sprinkle cumin, chili powder, smoked paprika, salt, and black pepper over the mixture. Do not stir; just layer them.

      Cook on Low: Cover the slow cooker with the lid and set it on low. Cook for about 6 hours, or until the chicken is cooked through and tender.

        Shred the Chicken: After cooking time is up, remove the chicken breasts from the slow cooker and place them on a cutting board. Use two forks to shred the chicken into bite-sized pieces.

          Combine and Creamify: Return the shredded chicken to the slow cooker. Add the cubed cream cheese and lime juice. Stir well until the cream cheese is fully melted and incorporated into the chili, creating a creamy consistency.
