4 medium potatoes, peeled and diced

1 cup diced ham (leftover or pre-cooked)

1 cup carrots, sliced

1/2 cup celery, diced

1 medium onion, chopped

3 cups chicken or vegetable broth

1 cup heavy cream or half-and-half

1 teaspoon garlic powder

1 teaspoon thyme (dried)

1/2 teaspoon black pepper

1 teaspoon salt (or to taste)

1/4 cup chopped fresh parsley (for garnish)

Optional toppings: croutons, shredded cheese, or green onions

Instructions
 

Prepare the Vegetables: In a slow cooker, combine the diced potatoes, sliced carrots, diced celery, and chopped onion.

    Add the Ham: Stir in the diced ham, which will add a savory flavor to the chowder.

      Pour in the Broth: Add the chicken or vegetable broth to the slow cooker, ensuring that all the ingredients are covered in liquid.

        Season: Sprinkle in the garlic powder, dried thyme, black pepper, and salt. Stir gently to mix all ingredients together.

          Cook: Cover the slow cooker and set it on low for 6-7 hours or on high for 3-4 hours. The potatoes should be tender when cooked.

              Blend (Optional): For a smoother texture, use an immersion blender to puree a portion of the chowder directly in the slow cooker, leaving some chunks for texture. Alternatively, you can blend a few cups in a regular blender and return it back to the cooker.
