Ingredients

2 lbs boneless, skinless chicken thighs

4 cups low-sodium chicken broth

1 medium onion, diced

3 carrots, sliced

2 celery stalks, chopped

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

1 cup heavy cream

1 tablespoon cornstarch (optional, for thickening)

Salt and pepper to taste

2 cups refrigerated biscuit dough (or homemade dumplings)

Fresh parsley, chopped (for garnish)

Instructions

Prep the Chicken: Season the chicken thighs with salt, pepper, paprika, and dried herbs.

Layer Ingredients: In the slow cooker, place the seasoned chicken thighs at the bottom. Add the diced onion, sliced carrots, chopped celery, and minced garlic on top.

Add Broth: Pour the chicken broth over the layered ingredients, ensuring the chicken is fully submerged.

Slow Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shreds.

Shred Chicken: Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.

Creamy Mix: Stir in the heavy cream. If you prefer a thicker consistency, mix cornstarch with a bit of water in a separate bowl and add it to the slow cooker, stir well, and let it cook for an additional 30 minutes.

Add Dumplings: Cut the biscuit dough into quarters and fold them gently into the creamy mixture in the slow cooker. Make sure they are evenly distributed but do not stir too much to keep the dumplings fluffy.

Cook Dumplings: Cover and cook for an additional 30-40 minutes on high until the dumplings are cooked through (they'll be light and fluffy).

Serve: Garnish with fresh chopped parsley before serving. Enjoy this creamy, comforting dish with family and friends!
