Ingredients

4 boneless, skinless chicken breasts

1 cup long-grain white rice

2 cups low-sodium chicken broth

1 cup cream of mushroom soup (or homemade)

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup frozen peas and carrots mix

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 teaspoon olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prepare Chicken: Season the chicken breasts with salt, pepper, paprika, and thyme. Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts for about 3-4 minutes on each side, until golden brown. Remove from the skillet and set aside.

Sauté Vegetables: In the same skillet, add chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent and fragrant.

Combine Ingredients: In a slow cooker, combine the rice, chicken broth, cream of mushroom soup, sautéed onions, frozen peas and carrots, and additional salt and pepper to taste. Stir until well mixed.

Layer Chicken: Place the seared chicken breasts on top of the rice mixture in the slow cooker. Ensure they are partially submerged in the liquid.

Slow Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the rice is tender and the chicken is fully cooked (internal temperature reaches 165°F / 74°C).

Final Touches: Once cooked, give the casserole a gentle stir to mix the ingredients together. Allow it to sit for 10-15 minutes to thicken slightly before serving.

Serve: Garnish with freshly chopped parsley and serve warm. Enjoy your comforting meal with a side salad or some crusty bread!
