2 boneless, skinless chicken breasts

Salt and pepper, to taste

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably Italian-style)

½ cup grated Parmesan cheese, divided

1 teaspoon garlic powder

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional)

2 cups marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

Fresh basil leaves, for garnish

Olive oil, for frying

Instructions
 

Prep the Chicken: Use a meat mallet to gently pound the chicken breasts to an even thickness, about ½ inch. Season both sides generously with salt and pepper.

    Set Up Breading Station: Prepare three shallow dishes: one with flour, one with beaten eggs, and the third with a mix of breadcrumbs, ¼ cup of Parmesan cheese, garlic powder, oregano, and red pepper flakes.

      Bread the Chicken: Dredge each chicken breast in flour, shaking off the excess. Then, dip in the beaten eggs, allowing any excess to drip off. Finally, coat the chicken in the breadcrumb mixture, pressing lightly to adhere.

        Cook the Chicken: Heat about 2-3 tablespoons of olive oil in a large skillet over medium heat. Once hot, carefully add the breaded chicken breasts. Cook for about 4-5 minutes on each side, or until golden brown and cooked through. Transfer the chicken to a plate and cover with aluminum foil to keep warm.

          Prepare the Marinara Sauce: In the same skillet, add the marinara sauce, stirring to combine with any leftover bits from the chicken. Allow it to simmer for about 3-4 minutes.
