Ingredients

4 medium ripe peaches, pitted and sliced

1 cup sharp cheddar cheese, shredded

1 cup cream cheese, softened

8 flour tortillas (8-inch)

2 tablespoons honey (plus extra for drizzling)

1 teaspoon ground cinnamon

1 tablespoon butter (for cooking)

Optional: Fresh mint leaves for garnish

Instructions

Prepare the Peach Filling: In a medium bowl, combine the sliced peaches, honey, and ground cinnamon. Gently toss the ingredients together until the peaches are well-coated.

Spread Cream Cheese: Take one flour tortilla and spread a generous amount of cream cheese on half of the tortilla. This will serve as a creamy base for the filling.

Layer the Filling: On the same half of the tortilla with cream cheese, sprinkle a layer of shredded cheddar cheese, followed by a portion of the peach mixture.

Fold the Tortilla: Fold the tortilla in half, covering the peach and cheese filling. Press gently to seal.

Cook the Quesadilla: In a large skillet, melt 1 tablespoon of butter over medium heat. Place the folded quesadilla into the skillet. Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted.

Repeat: Repeat the process with the remaining tortillas and filling mixture, adding more butter to the pan as needed.

Slice and Serve: Once all quesadillas are cooked, slice them into wedges and serve them warm. Drizzle with extra honey and garnish with fresh mint leaves if desired.
