Ingredients

1 pound large shrimp (peeled and deveined)

1 bunch asparagus (trimmed and cut into 2-inch pieces)

4 cloves garlic (minced)

1 lemon (zested and juiced)

4 tablespoons olive oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper (to taste)

Fresh parsley (chopped, for garnish)

Instructions

Sauté the Asparagus: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the asparagus pieces and sauté for about 5-7 minutes, or until they are vibrant green and tender-crisp. Season them with a pinch of salt and pepper. Remove the asparagus from the skillet and set aside.

Cook the Shrimp: In the same skillet, add another 2 tablespoons of olive oil. Once hot, add the minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant.

Add Shrimp: Immediately add the shrimp to the skillet. Cook for about 2-3 minutes on one side without stirring, until they turn pink and opaque. Flip the shrimp and cook for another 2-3 minutes on the other side.

Combine Ingredients: Once the shrimp are fully cooked, add the sautéed asparagus back into the skillet. Pour in the lemon juice and lemon zest. Toss everything together gently until well combined. Taste and adjust the seasoning with more salt, pepper, or lemon juice if desired.

Serve: Remove from heat and garnish with freshly chopped parsley. Serve immediately with crusty bread, over rice, or pasta for a complete meal.
