Shrimp Skewers with Lemon Salsa

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil

3 cloves garlic, minced

Juice of 2 lemons (about 1/4 cup)

Zest of 1 lemon

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

For Lemon Salsa:

1 cup cherry tomatoes, diced

1 small red onion, finely chopped

1 jalapeño, seeds removed and diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Marinate the Shrimp: In a bowl, combine olive oil, minced garlic, lemon juice, lemon zest, smoked paprika, salt, and black pepper. Add the shrimp to the marinade, stirring to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 1 hour.

    Prepare the Lemon Salsa: In a mixing bowl, combine the diced cherry tomatoes, red onion, jalapeño, and cilantro. Squeeze in the lime juice and season with salt and pepper. Mix well and set aside to allow the flavors to meld.

      Preheat the Grill: Preheat your grill to medium-high heat. If using wooden skewers, make sure to soak them in water for at least 30 minutes before grilling to prevent burning.
