4 cups of diced potatoes (Yukon Gold or red potatoes work well)

2 cups of cooked ham, diced

1 cup of shredded cheddar cheese

1 cup of sour cream

1 cup of milk

1 medium onion, finely chopped

2 cloves of garlic, minced

1 teaspoon of dried thyme

1 teaspoon of smoked paprika

1/2 teaspoon of black pepper

1 teaspoon of salt

1 tablespoon of olive oil

1 cup of crushed cornflakes (optional, for topping)

1 tablespoon of fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Potatoes: In a large pot, bring water to a boil and add the diced potatoes. Cook for about 10 minutes until they are just tender but not falling apart. Drain and set aside.

      Sauté Onions and Garlic: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

        Mix the Filling: In a large mixing bowl, combine the cooked potatoes, diced ham, sautéed onions and garlic, shredded cheddar cheese, sour cream, milk, thyme, smoked paprika, black pepper, and salt. Mix well until everything is evenly combined.

          Assemble the Casserole: Grease a 9x13 inch baking dish. Pour the potato and ham mixture into the dish, spreading it out evenly. If desired, sprinkle the crushed cornflakes evenly over the top for a crunchy texture.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and bubbly.
