Savory Chicken Pot Pie with Puff Pastry

1 lb (450g) boneless, skinless chicken breasts, diced

1 cup carrots, diced

1 cup potatoes, diced

1 cup green peas

1 cup celery, diced

1 medium onion, diced

2 cloves garlic, minced

2 tbsp olive oil

1 tsp dried thyme

1 tsp dried rosemary

1 cup chicken broth

1 cup heavy cream

3 tbsp all-purpose flour

Salt and pepper to taste

1 egg, beaten (for egg wash)

1 package (14 ounces) puff pastry sheets, thawed

Instructions
 

Prepare the Chicken: In a large skillet, heat olive oil over medium heat. Add diced chicken and season with salt and pepper. Cook until lightly browned and no longer pink, about 5-7 minutes. Remove chicken from skillet and set aside.

    Sauté Vegetables: In the same skillet, add diced onion, garlic, and celery. Sauté for 2-3 minutes until onions are translucent. Then add carrots and potatoes, cooking for another 5 minutes.

      Create the Sauce: Sprinkle flour over the vegetables and stir to coat. Gradually pour in the chicken broth and heavy cream, stirring continuously. Add thyme and rosemary. Bring to a simmer, allowing the mixture to thicken, about 5 minutes.

        Combine Ingredients: Return the cooked chicken to the skillet. Add green peas, and mix well. Taste and adjust seasoning as needed. Remove from heat and let the filling cool slightly.

          Preheat Oven: Preheat your oven to 400°F (200°C).

            Assemble the Pie: Roll out one sheet of puff pastry on a lightly floured surface, and fit it into a 9-inch pie dish, allowing some overhang. Pour the chicken filling into the pastry-lined dish. Roll out the second sheet of puff pastry, placing it over the filling. Trim and seal the edges, making slits in the top for steam to escape.
