1 lb chicken breast, thinly sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 red bell pepper, sliced

1 cup broccoli florets

1 medium carrot, julienned

1 zucchini, sliced

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 green onions, chopped (for garnish)

Sesame seeds (for garnish, optional)

Instructions
 

Marinate the Chicken: In a bowl, combine the thinly sliced chicken breast, soy sauce, oyster sauce, and cornstarch. Mix well to coat the chicken evenly. Allow it to marinate for at least 15 minutes (or longer if time permits).

    Prepare the Veggies: While the chicken is marinating, wash and cut the vegetables as specified. This prepares you for a quick cook once you heat your pan.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Ensure the oil is hot before adding the chicken.

        Cook the Chicken: Once the oil is shimmering, add the marinated chicken in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is thoroughly cooked and lightly golden. Remove the chicken from the pan and set aside.

          Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of oil. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant. Then, toss in the red bell pepper, broccoli, carrot, and zucchini. Stir-fry the vegetables for about 4-5 minutes until they are just tender but still crisp.

            Combine Chicken and Vegetables: Return the cooked chicken to the skillet with the vegetables. Stir well to combine and let everything cook together for another 2 minutes, ensuring the chicken is heated through and the flavors meld.

              Garnish and Serve: Remove from heat and garnish with chopped green onions and sprinkled sesame seeds (if using). Serve hot over cooked rice or noodles for a complete meal.
