For the Salmon:

1 lb (450g) fresh salmon fillets

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 1 lime

For the Mango Slaw:

1 large ripe mango, peeled, pitted, and julienned

2 cups green cabbage, finely shredded

1/2 red bell pepper, thinly sliced

1/4 red onion, thinly sliced

1/4 cup fresh cilantro, chopped

1 tablespoon honey

2 tablespoons lime juice

Salt and pepper to taste

For Assembly:

8 small corn or flour tortillas

Lime wedges for serving

Marinate the Salmon: In a small bowl, mix olive oil, chili powder, cumin, garlic powder, salt, black pepper, and lime juice. Coat the salmon fillets with the marinade and let them sit for at least 15 minutes at room temperature.

    Prepare the Mango Slaw: In a large bowl, combine the julienned mango, shredded cabbage, red bell pepper, red onion, and cilantro. In a separate small bowl, whisk together the honey, lime juice, salt, and pepper. Drizzle this dressing over the slaw and toss well to combine. Set aside to let the flavors meld while you cook the salmon.

      Cook the Salmon: Preheat your grill or skillet over medium-high heat. Once hot, place the marinated salmon fillets on the grill or pan. Cook for about 4-5 minutes on each side, or until the salmon flakes easily with a fork and reaches your preferred doneness. Remove from heat and let it rest for a few minutes.

        Warm the Tortillas: To warm the tortillas, you can either grill them for about 30 seconds on each side or heat them in a dry skillet for 1-2 minutes until they are pliable.

          Assemble the Tacos: Flake the cooked salmon into bite-sized pieces. Place a generous amount of the mango slaw onto each tortilla, followed by pieces of the salmon. Top with additional cilantro if desired.

            Serve: Squeeze fresh lime juice over the tacos and serve immediately with lime wedges on the side.
