1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

For the Blueberry Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup fresh blueberries

1/4 cup grated carrots

1/4 cup red onion, thinly sliced

1 tablespoon fresh cilantro, chopped

2 tablespoons apple cider vinegar

1 tablespoon honey

Salt and pepper to taste

For Serving:

8 small corn or flour tortillas

Lime wedges

Sliced avocados (optional)

Additional cilantro leaves for garnish

Instructions

Prepare the Salmon:

    - Preheat your grill or oven to 400°F (200°C).

      - Rinse and pat the salmon fillet dry, then brush it with olive oil.

        - In a small bowl, mix together smoked paprika, garlic powder, cumin, salt, and pepper. Rub this spice mixture over the salmon fillet evenly.

          Cook the Salmon:

            - For grilling, place the salmon on a preheated grill and cook for about 6-8 minutes per side, or until it flakes easily with a fork. If baking, place the salmon on a parchment-lined baking sheet and bake for about 12-15 minutes or until cooked through.

              Make the Blueberry Slaw:

                - In a large bowl, combine the green cabbage, red cabbage, grated carrots, blueberries, red onion, and cilantro.

                  - In a separate small bowl, whisk together the apple cider vinegar, honey, salt, and pepper. Pour this dressing over the slaw and toss gently to combine. Set aside to let the flavors meld.

                    Warm the Tortillas:

                      - Heat the corn or flour tortillas on a skillet over medium heat for about 30 seconds on each side until they are warm and pliable.

                        Assemble the Tacos:

                          - Flake the cooked salmon into bite-sized pieces.

                            - To assemble, place a generous amount of salmon on each tortilla, followed by a scoop of blueberry slaw. Add sliced avocados if desired, and garnish with additional cilantro.

                              Serve:

                                - Serve the tacos with lime wedges on the side for a fresh squeeze of lime juice. Enjoy your vibrant and mouthwatering Salmon Tacos with Blueberry Slaw!
