Roasted Garlic and Parmesan Spaghetti Squash

1 medium spaghetti squash

6 cloves garlic, minced

3 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon Italian seasoning (or a mix of oregano, basil, and thyme)

½ cup grated Parmesan cheese

2 tablespoons chopped fresh parsley (for garnish)

Optional: Crushed red pepper flakes, for heat

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Spaghetti Squash: Carefully cut the spaghetti squash in half lengthwise. Scoop out the seeds and fibrous core using a spoon.

      Season the Squash: Place the squash halves cut-side up on a baking sheet. Drizzle 1 tablespoon of olive oil over the insides of each half. Season with salt, pepper, and Italian seasoning.

        Roast the Squash: Place the squash in the preheated oven and roast for about 40-45 minutes, or until the flesh is tender and can be easily shredded with a fork.

          Prepare the Garlic Oil: While the squash is roasting, heat 2 tablespoons of olive oil in a small pan over medium heat. Add the minced garlic and sauté until fragrant, about 2 minutes. Be careful not to burn the garlic.

            Mix with Cheese: Once roasted, remove the squash from the oven. Use a fork to scrape the flesh, creating spaghetti-like strands. Transfer the strands to a bowl and slowly mix in the sautéed garlic oil and grated Parmesan cheese until well combined. Adjust seasoning with more salt, pepper, or optional red pepper flakes to taste.

              Serve: Divide the roasted garlic parmesan spaghetti squash into bowls, garnish with chopped fresh parsley, and additional Parmesan cheese if desired. Serve warm and enjoy!
