2 cups fresh broccoli florets

1 cup sharp cheddar cheese, grated

½ cup breadcrumbs (Italian-style preferred)

2 large eggs

2 tablespoons olive oil

1 teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Broccoli: In a mixing bowl, toss the fresh broccoli florets with olive oil, garlic powder, onion powder, salt, and pepper. Ensure all the florets are well-coated.

      Roast the Broccoli: Spread the seasoned broccoli on the prepared baking sheet and roast in the preheated oven for about 15-20 minutes, or until they are tender and slightly crispy. Keep an eye on them to prevent burning!

        Cool and Chop: Once out of the oven, allow the broccoli to cool slightly. Then chop the roasted broccoli into small, bite-sized pieces.

          Mix the Ingredients: In a large mixing bowl, combine the chopped broccoli, grated sharp cheddar cheese, breadcrumbs, and eggs. Mix well until all ingredients are evenly incorporated. Adjust seasoning with more salt and pepper if necessary.
