4 large whole wheat tortillas

1 cup shredded cheese (blend of cheddar and mozzarella)

1 red bell pepper, diced

1 yellow bell pepper, diced

1 small zucchini, grated

1 cup fresh spinach, roughly chopped

½ cup corn kernels (fresh or frozen)

1 teaspoon taco seasoning

1 tablespoon olive oil

Salt and pepper to taste

Optional toppings: sour cream, salsa, guacamole, fresh cilantro

Prepare the Veggies: In a large mixing bowl, combine the diced red and yellow bell peppers, grated zucchini, chopped spinach, and corn. Sprinkle in the taco seasoning, along with salt and pepper to taste. Toss until everything is well coated.

    Heat the Skillet: In a large skillet, heat olive oil over medium heat. Once hot, add the veggie mixture and sauté for about 5 minutes, or until the vegetables are slightly tender. Remove from heat.

      Assemble the Quesadillas: On half of each tortilla, layer a portion of the sautéed veggies and a generous handful of cheese. Fold the tortilla in half to cover the filling.
