Ingredients

1 lb ground turkey

2 medium sweet potatoes, peeled and cubed

1 medium onion, diced

2 cloves garlic, minced

1 cup frozen peas and carrots mix

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 tablespoon olive oil

1 tablespoon Worcestershire sauce

1/2 cup chicken broth

Salt and pepper to taste

1/2 cup shredded cheddar cheese (optional)

Fresh parsley for garnish (optional)

Instructions

Cook the Sweet Potatoes:

In a large pot, bring salted water to a boil. Add the cubed sweet potatoes and cook until tender, about 15-20 minutes. Drain and return to the pot.

      Mash Sweet Potatoes:

Add a pinch of salt and a drizzle of olive oil or a small knob of butter to the sweet potatoes. Mash until smooth and set aside.

          Prepare the Turkey Filling:

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.

              Cook the Turkey:

Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned, about 6-8 minutes. Drain any excess fat if needed.

                  Add Vegetables and Seasoning:

Stir in the frozen peas and carrots, Worcestershire sauce, chicken broth, thyme, rosemary, salt, and pepper. Let it simmer for about 5 minutes until the mixture is heated through and slightly thickened.

                      Assemble the Pie:

Preheat your oven to 400°F (200°C). In a baking dish, spread the turkey filling evenly across the bottom. Top with the mashed sweet potatoes, smoothing it out to cover the turkey completely. If using, sprinkle shredded cheddar cheese on top.

                          Bake:

Place the dish in the preheated oven and bake for 20-25 minutes or until the top is lightly golden and cheese is melted.

                              Serve:

Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley if desired, then scoop and serve warm.
