2 cups cooked chicken, shredded or diced

1/2 cup creamy peanut butter

3 tablespoons soy sauce (low sodium preferred)

1 tablespoon honey or maple syrup

1 tablespoon rice vinegar

1 teaspoon sesame oil (optional)

1 cup shredded carrots

1 cup cucumber, thinly sliced

1/2 cup red bell pepper, thinly sliced

1/4 cup chopped fresh cilantro or green onions

4 whole wheat or spinach wraps (8-inch)

1/4 cup chopped peanuts (for garnish)

Instructions
 

Prepare the Sauce: In a medium mixing bowl, combine the peanut butter, soy sauce, honey (or maple syrup), rice vinegar, and sesame oil. Whisk until smooth and well-blended. This will be your delicious Thai peanut sauce!

    Mix the Filling: In a large bowl, toss the cooked chicken with half of the peanut sauce until evenly coated. Reserve the remaining sauce for drizzling.
