Quick Lemon Garlic Shrimp and Rice Bowls

1 pound large shrimp, peeled and deveined

1 cup uncooked jasmine rice

2 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 1 lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

2 cups fresh spinach (optional)

¼ cup fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Rice: In a medium saucepan, bring 2 cups of water to a boil. Add the jasmine rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is fluffy and the water is absorbed. Remove from heat and let it sit.

    Sauté the Shrimp: While the rice is cooking, heat the olive oil in a large skillet over medium-high heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.

      Add Shrimp and Season: Add the shrimp to the skillet and season with salt, pepper, and red pepper flakes. Sauté for 2-3 minutes on one side until they start turning pink, then flip.

        Add Lemon Flavor: Once the shrimp are nearly cooked, add the lemon zest and juice to the skillet. If using spinach, add it now and stir until just wilted, about 1 minute. Cook for an additional minute until the shrimp are thoroughly cooked and the sauce has slightly thickened.

          Assemble the Bowls: Fluff the cooked rice with a fork and divide it into serving bowls. Top each bowl with the lemon garlic shrimp mixture and sprinkle with fresh parsley.
