Ingredients

For the Beef Tacos:

1 lb ground beef (80/20 for flavor)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup shredded cheese (cheddar or Mexican blend)

½ cup sour cream (optional)

Fresh cilantro, for garnish

For the Fresh Salsa:

2 medium tomatoes, diced

1 jalapeño, seeds removed and finely chopped

1 small red onion, finely chopped

1 lime, juiced

Salt and pepper to taste

¼ cup fresh cilantro, chopped

Instructions

Prepare the Salsa: In a medium bowl, combine diced tomatoes, jalapeño, red onion, lime juice, salt, pepper, and cilantro. Mix well and set aside to let the flavors meld.

Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add chopped onions and sauté until they become translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.

Season the Meat: Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

Spice It Up: Mix in chili powder, cumin, paprika, salt, and pepper into the meat mixture. Stir thoroughly to combine, cooking for another 2-3 minutes until the spices are fragrant.

Warm the Tortillas: While the beef finishes cooking, heat the tortillas over a dry skillet on medium heat for about 30 seconds per side until warmed and pliable.

Assemble the Tacos: Lay a warm tortilla on a plate, spoon a generous amount of the beef mixture, followed by shredded lettuce and cheese. Add a dollop of sour cream if desired.

Top with Salsa: Spoon the fresh salsa over the beef and garnish with fresh cilantro. Repeat until all tacos are assembled.

Serve: Enjoy your tasty beef tacos immediately with extra lime wedges on the side, if desired.
