Quick and Easy Vegetable Quesadillas for Kids

Ingredients
  

4 large flour tortillas

1 cup shredded mozzarella cheese

1/2 cup shredded cheddar cheese

1 cup finely chopped bell peppers (red, yellow, or green)

1/2 cup corn kernels (fresh or frozen)

1/2 cup black beans, rinsed and drained

1 small zucchini, finely chopped

1/4 teaspoon garlic powder

1/4 teaspoon cumin

Salt and pepper to taste

2 tablespoons olive oil

Optional: Salsa or guacamole for dipping

Instructions
 

Prep the Veggies: In a large bowl, combine the chopped bell peppers, corn, black beans, zucchini, garlic powder, cumin, salt, and pepper. Mix well until all the veggies are coated with seasonings.

    Heat the Pan: In a large skillet, heat 1 tablespoon of olive oil over medium heat.

      Assemble the Quesadillas: Place one tortilla in the skillet. Evenly sprinkle 1/2 cup of mozzarella and 1/4 cup of cheddar cheese on one half of the tortilla. Layer a generous scoop of the veggie mixture on top of the cheese and fold the tortilla in half.

        Cook the Quesadilla: Cook for about 3-4 minutes until the bottom is golden brown and the cheese is melting. Carefully flip the quesadilla using a spatula and cook the other side for an additional 2-3 minutes until it is golden and crispy.

          Repeat: Remove the cooked quesadilla from the skillet and keep it warm. Add more olive oil if necessary and repeat the process with the remaining tortillas and filling.

            Cut and Serve: Once all the quesadillas are cooked, cut them into wedges. Serve warm with salsa or guacamole for dipping!
