1 lb ground beef or turkey

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 can (10 oz) diced tomatoes

1 packet taco seasoning

2 cups beef or vegetable broth

1 cup water

1 medium onion, diced

2 cloves garlic, minced

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, chopped cilantro, avocado, or tortilla chips

Instructions
 

Cook the Protein: In a large pot over medium heat, add the ground beef or turkey. Cook until browned, breaking it up with a spatula, about 5-7 minutes. Drain any excess fat if necessary.

    Soften the Aromatics: Add the diced onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.

      Combine the Ingredients: Stir in the black beans, kidney beans, corn, diced tomatoes with green chilies, diced tomatoes, taco seasoning, broth, and water. Mix until well combined.
