Ingredients

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 ribs celery, diced

1 medium potato, peeled and cubed

1 zucchini, diced

1 cup corn kernels (fresh or frozen)

1 cup green beans, chopped into 1-inch pieces

4 cups vegetable broth

1 cup milk (or plant-based alternative)

1 teaspoon dried thyme

1 teaspoon dried basil

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Heat the Oil: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 4-5 minutes.

Add Garlic and Vegetables: Stir in the minced garlic, diced carrots, and celery. Sauté for an additional 3-4 minutes until the vegetables begin to soften.

Incorporate Potatoes and Zucchini: Add the cubed potato and zucchini to the pot. Cook for another 5 minutes, stirring occasionally.

Pour in Broth and Seasonings: Pour in the vegetable broth, and add the corn, green beans, dried thyme, and dried basil. Bring the mixture to a gentle boil.

Simmer: Reduce the heat to low and let it simmer uncovered for about 15 minutes, or until the vegetables are tender.

Creamy Texture: Stir in the milk and adjust seasoning with salt and pepper to your liking. Cook for an additional 5 minutes, allowing the chowder to thicken slightly.

Serve: Ladle the chowder into bowls and garnish with fresh parsley. Enjoy your cozy meal with a warm bread roll on the side!
