Ingredients

1 cup (240 ml) pumpkin puree (canned or fresh)

1/2 cup (115 g) unsalted butter, melted

1 cup (200 g) brown sugar, packed

1/2 cup (100 g) granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups (190 g) all-purpose flour

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1 cup (175 g) white chocolate chips

1/2 cup (60 g) chopped pecans or walnuts (optional)

Instructions

Preheat Oven: Start by preheating your oven to 350°F (175°C). Line an 8x8-inch (20x20 cm) baking pan with parchment paper, leaving some overhang for easy removal later.

Mix Wet Ingredients: In a large mixing bowl, whisk together the melted butter, pumpkin puree, brown sugar, and granulated sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, cinnamon, nutmeg, ground ginger, and salt until well combined.

Combine Both Mixtures: Slowly add the dry ingredient mixture to the wet ingredients, stirring carefully with a spatula or wooden spoon until just combined. Be careful not to overmix.

Fold in Chocolate and Nuts: Gently fold in the white chocolate chips and nuts (if using) until evenly distributed throughout the batter.

Bake: Pour the batter into the prepared baking pan. Use a spatula to spread the mixture evenly. Bake in the preheated oven for 25-30 minutes or until the blondies are golden brown, and a toothpick inserted in the center comes out clean or with a few moist crumbs.

Cool and Slice: Allow the blondies to cool in the pan on a wire rack for about 15 minutes. Once cool enough to handle, lift the blondies out of the pan using the parchment overhang. Let them cool completely before slicing into squares.

Serve: Enjoy your Pumpkin White Chocolate Blondies warm or at room temperature, perhaps with a cup of tea or coffee!
