Ingredients

1 ½ cups all-purpose flour

1 cup canned pumpkin puree

½ cup granulated sugar

½ cup brown sugar, packed

½ cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

½ teaspoon baking powder

1 teaspoon pumpkin pie spice

½ teaspoon ground cinnamon

¼ teaspoon salt

½ cup walnuts or pecans, chopped (optional)

½ cup chocolate chips or raisins (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

Mix Dry Ingredients: In a medium bowl, sift together the flour, baking soda, baking powder, pumpkin pie spice, ground cinnamon, and salt. Set aside.

Combine Wet Ingredients: In a large mixing bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined and smooth.

Combine Mixtures: Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix; it's okay if there are a few lumps.

Add Extra Ingredients: If desired, fold in the nuts and chocolate chips or raisins to the batter, ensuring they are evenly distributed.

Fill Muffin Tins: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full to allow room for rising.

Bake the Muffins: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool and Serve: Once baked, remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
