1 cup heavy whipping cream

1 cup canned pumpkin puree

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 teaspoon salt

1 pack (3.4 oz) instant vanilla pudding mix

1 1/2 cups milk

Crushed graham crackers (for topping)

Whipped cream (for serving)

Fresh mint leaves (for garnish, optional)

Instructions
 

In a large mixing bowl, whip the heavy cream using an electric mixer on medium-high speed until soft peaks form. This should take about 2-3 minutes. Set aside.

    In another bowl, combine the pumpkin puree, powdered sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix well until smooth and creamy.

      Add the instant vanilla pudding mix to the pumpkin mixture, then gradually pour in the milk while whisking until well combined and thickened. This should take about 2 minutes.

        Gently fold the whipped cream into the pumpkin mixture using a rubber spatula. Do this in batches, ensuring you don’t deflate the whipped cream too much. This will create a light and airy mousse.

          Once the mixture is well blended, spoon or pipe the mousse into serving cups, filling them about three-quarters full.

            Chill the mousse cups in the refrigerator for at least 1 hour to allow them to set.
